Sweet Potato Salad with Cilantro & Lime

Roasted sweet potatoes mix with a lightly creamy dressing and cilantro and lime to create a vibrant and very satisfying salad. Perfect for barbecues and picnics.
PREP, COOK, TOTAL TIME
Prep time: 10 minutes
Bake time: 42 to 44 minutes
3 tablespoons LouAna Coconut Oil or LouAna Organic Coconut Oil, warmed
1 teaspoon ground cumin
1 teaspoon kosher salt
2 large sweet potatoes, cut into 2-inch long by 1-inch wide wedges
1/2 cup chopped cilantro
1/4 cup crumbled Cotija cheese
Whisk together the warmed coconut oil cumin and salt until well incorporated. Toss 2 tablespoons of this mixture with the prepared sweet potatoes. Transfer to a baking sheet and sprinkle with additional kosher salt. Bake for 40 minutes, stirring once halfway through.
Finally, turn your oven to broil and place sweet potatoes on the top rack. Broil for 2 to 4 minutes until browned and even a little charred in spots.
Transfer sweet potatoes to a serving platter. Drizzle with additional cumin oil, the juice of two limes, chopped cilantro and Cotija cheese.
Serve warm or at room temperature.
