Grilled Corn with Lime

Grilled corn is great, and it’s even better when it’s brushed with coconut oil, garlic and chile powder. The pop of freshness from the lime sets things over the top. A bit of crumbled Cotija or Feta wouldn’t be a bad way to finish the dish either.

Cook time: 12 minutes
1 1/2 tablespoons LouAna® 100% Pure Coconut Oil, melted
1 garlic clove, minced
1 teaspoon chile powder
1 1/2 teaspoon kosher salt
4 ears of corn, husked and silk removed
1 lime, cut in wedges
Preheat grill or grill pan to medium-high heat.
In a small bowl, whisk together coconut oil, garlic, chile powder and salt. Brush generously on corn, using the entire mixture. Grill for about 12 minutes, turning 3 times.
Serve hot with wedges of lime to squeeze.
