Fruit Skewers with Sweet Lemon Vinaigrette

DESCRIPTION

Everyone loves a good fruit salad, but sometimes that can be so boring. Here the salad gets skewered, then topped with a coconut oil-based sweet and tart vinaigrette. The fresh mint puts it over the top.

PREP, COOK, TOTAL TIME

Prep/Assembly time: 30 minutes

SERVINGS

Yields: approx. 12 skewers

INGREDIENTS

1 pint strawberries, cleaned and hulled
1 cup blueberries
1/4 fresh pineapple, cut into 1-inch pieces
2 kiwis, peeled and cut into ¼ inch slices
12 bamboo skewers
2 tablespoons LouAna® 100% Pure Coconut Oil
Juice of one medium lemon
1 tablespoon honey
1/2 cup fresh mint leaves

DIRECTIONS

Assemble fruit on skewers as desired.

Warm coconut oil, lemon and honey together for 30 seconds in the microwave and whisk to combine. Drizzle over skewer, top with fresh mint and serve immediately.
