Caramelized Pineapple with Ice Cream

This simple dessert comes together quickly and is definitely a crowd pleaser. Add caramel sauce and whipped cream for a pineapple sundae, or skip the ice cream completely for a satisfying dessert.


Prep time: 10 minutes
Cook time: 8 to 10 minutes


Serves: 4 to 6


2 tablespoons LouAna Coconut Oil or LouAna Organic Coconut Oil
1/2 cup dark brown sugar
1/2 pineapple, peeled, cored and diced into bite-size pieces
1 quart vanilla ice cream
Freshly grated nutmeg


Heat coconut oil and dark brown sugar in a medium sauce pan over medium-high heat, stirring regularly until it is melted and bubbling, about 3 minutes. Stir in pineapple chunks. The sauce will seize up for a few minutes, but simply keep cooking and stirring for a total of 4 to 5 minutes until sauce has melted and coated the pineapple nicely. Remove from heat.

Serve warm pineapple over vanilla ice cream and grate a little fresh nutmeg over the top to garnish.
