Braised Carrots with Honey & Orange

Carrots have a deep, natural sweetness that pairs beautifully with honey and orange. They get a long bath in a flavorful broth, then finally are topped with vibrant fresh herbs.

Cook time: 25 minutes
Serves: 4 to 6
2 tablespoons LouAna Coconut Oil or LouAna Organic Coconut Oil
1/2 cup orange juice, freshly squeezed
1 tablespoon honey
1 teaspoon salt
1 tablespoon apple cider vinegar
10 to 12 small (7- to 8-inch) carrots with tops, peeled and halved lengthwise
1/4 cup chopped Italian parsley
In a medium sauté pan over medium-high heat, add coconut oil, orange juice, honey, salt and apple cider vinegar. Whisk to combine. Add prepared carrots.
Bring just to a boil, reduce heat to simmer and cover. Cook for 15 minutes. Remove lid and cook for an additional 10 minutes until sauce has reduced and coated carrots.
Transfer to a serving plate and sprinkle with fresh parsley.
Serve warm or at room temperature.
